Last week I decided to make a kind of savory pie (snack idea) for the cafe at home.

The result was this easy snack idea to make at home with sausage and kibbeh flour.

Ingredients:

• 700g of smoked calabresa sausage
• 1 cup of kibbeh flour
• 1 cup of hot water
• 1 chopped onion
• 2 tablespoons wheat flour
• 1 egg
• 1 pinch of spicy paprika
• 300g grated mozzarella
• 70g green olives or to taste
• 3 sliced tomatoes
• Chives to taste
• 200g cream cheese
• Chimichurri

Method:

In a bowl, add the flour (or wheat) for kibbeh, hot water and wait to hydrate.

Meanwhile, grind the sausage in the food processor and set aside.

Take the bowl with the already hydrated kibbeh flour (or wheat) and add the onion, olives, green onions, crushed sausage, egg and seasonings to taste, stir well to form a farofa.

Transfer a little of the dough (from the farofa) to a refractory greased with olive oil and spread it out well, add the cream cheese, half the mozzarella, the sliced tomatoes and another layer of the pepperoni sausage dough (or farofa), press well and the rest of the mozzarella.

Bake in a preheated oven at 200°C for approximately 40 minutes or until browned.

*It is delicious for lunch with coffee, beer, juice...
