Deep Pit Roast Smoked Corned Beef

Corned Beef cooked in the smoker and and then wrapped and deep pit roasted.

I wanted to see how this would turn out in place of the traditionally cooked corned beef. After soaking in water overnight to reduce the salt, the seasoning mix was rubbed into the meat. Then into the smoker for ~2 hours between 200 and 250F. Out of the smoker, then wrap in foil or butcher paper and into a 250F oven for 4.5 - 5 hours. No need to check the temperature, but somewhere in the 180-190F range is fine.

It comes out very juicy and has a nice smoke ring and flavor.
