For the dressing:
2 tbsp extra virgin olive oil
25g fresh basil
1 red chili, finely chopped
1 tbsp dried oregano
1/2 tsp white wine vinegar

For the dip:
4 tbsp vegan mayo
1 tsp white wine vinegar
1 tbsp water
1 tbsp dried oregano
1/2 tsp dried garlic
1 tsp chili flakes
1 tbsp gherkin juice from the jar
