Ethiopian coffee and of course injera are a mainstay of Ethiopian food. Lots of vegan recipes and well as meat dishes including Kitfo and Gored Gored which are raw.

So it is pretty safe to say that without injera there is no Ethiopian food.
Injera is made from Teff, it is more of a grass than a wheat and is said to the smallest grain in the world.
It is gluten free and is used in many ways within the cuisine.
You will find injera in dishes such as fit fit and fir fir, as a bed to place food on, rolled and used to grab a wonderful sauces and even in a dry form known as Dirkosh.

A thin pancake with a spongy texture and a slight sour taste, injera is fermented into a watery liquid and cooked on a large hotplate know as a Mitad. It is poured in a circular motion and only cooked on one side.
Injera is the backbone of Ethiopian food in the same way that rice is in other countries. Injera is Ethiopia
