Potato Latkes with Lox and Poached Egg

📕Recipe here:

❂ Ingredients:

4 Large Russet potatoes
1 Large Onion
2 Large Eggs (one for a pouched egg)
1 Tbsp Corn Starch
Salt/Pepper to taste
1/2 Tsp Ground Coriander
Vegetable Oil
Lox
Fresh Dill

❂ Cooking process:

⁃ Grate the potatoes and onion. Transfer the mixture to a clean bowl and squeeze and wring out as much of the liquid as possible.
⁃ Add the egg, cornstarch, salt, pepper, and ground coriander and mix until combined.
⁃ In a medium heavy-bottomed pan over medium-high heat, pour in about ¼ inch of the oil. Once the oil is hot use a tablespoon to drop the mixture into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs.
⁃ When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to the cooling rack. Repeat with the remaining mixture.

Poached Egg:

⁃ Pour 4 cups of water into a small saucepan to a gentle simmer. 200F. Add 1 Tbsp vinegar.
⁃ Crack an egg into a fine sieve set over a medium bowl. let the watery whites drain into the bowl below; Carefully transfer the egg to a small bowl.
⁃ Use the spoon to swirl the water in the pot to create a micro-tornado.
⁃ Pour the egg into the center of your tornado.
⁃ Boil for 2-3 minutes
