Southern Comfort Catfish Gumbo

Here's a Delicious recipe for catfish gumbo.
Ingredients:
1 pound catfish fillets, cut into bite-sized pieces
1/2 cup vegetable oil
1/2 cup all-purpose flour
1 onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 garlic cloves, minced
1 can diced tomatoes
4 cups chicken or seafood stock
1 bay leaf
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Salt and black pepper, to taste
Cooked white rice, for serving
Chopped fresh parsley, for garnish
