Enfrijoladas Recipe
Enfrijoladas, if you like refried Beans, than this is a dish for you. we like to serve them with pickled Red Onions.
Ingredients:
3 cups dry Pinto Beans,
2 tbsp Coconut Oil,
1 Red Onion, sliced,
4 Garlic Cloves, sliced,
1 tbsp Oregano,
1 tbsp + 1 tsp Tomato Bouillon,
1-1/2 tsp Epazote,
1/2 tsp Salt,
20 - 6" Corn Tortillas,
10 oz Fresh Milk Cheese, sliced,
8 oz Dry Cheese, crumbled,
1/2 bunch Cilantro, chopped,
Soak Pinto Beans in hot Water for 1-2 hours.
Drain & rinse.
Use Pressure Cooker. Combine Beans, Epazote, Salt, Bouillon and 6-7 cups of hot Water.
Stir, close lid and pressure cook for 50 Minutes.
Heat Oil in Skillet, cook Onion & Garlic until they take on color.
When Beans are done, remove & reserve cooking Liquid.
Mash Beans, on a low simmer integrate Onion/Garlic stir and add enough Cooking Liquid until Beans are a consistency of your liking. (somewhat runny).
Warm Tortilla, place a spoon full of Beans in the middle, top with slice of Fresh Milk Cheese, fold Tortilla and cover with more Beans.
Sprinkle with crumbled Dry Cheese and Cilantro.
