Greek Chicken Souvlaki

These chicken skewers are made with the Greek seasoning we posted last week. It is delicious paired with some Greek rice and pita bread. Give it a try. - Michele

Ingredients: 
1 boneless, skinless, chicken breasts, in bite size pieces 
2 TBSP tablespoons olive oil 
1 TBSP white wine vinegar 
4 large garlic cloves, minced
3 TBSP greek seasoning 
1 large lemon, juiced
1/2 tsp salt 
1/2 tsp pepper

Directions: 
Combine all ingredients in a ziplock bag and shake well to mix.
Add chicken and shake to ensure the marinade is covering the chicken. Allow to marinade at room temperature for 20 minutes or at least 6 hours in the fridge. 
Remove chicken from marinade, and toss leftover marinade. Thread chicken into skewers and grill until cooked thoroughly on an outdoor grill or on the stove top with grill pan or on a sheet pan. Place in the oven @ 425 degrees for 15 minutes. Turn and bake an additional 5-10 minutes. Broil for additional 1-2 minutes to achieve a slight charring.  Serve warm!
Serve with tzatziki sauce for dipping, as a topping for greek salad, in pita for chicken gyros, with greek sides or roasted vegetables.
