Black Magic Chocolate Cake

1 3/4 c all purpose flour
2 c sugar
3/4 c unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c strong black coffee
2 large eggs
1 c buttermilk
1/2 c vegetable oil
1 tsp vanilla extract

Chocolate Frosting
1 stick butter, softened
1/2 c vegetable shortening
4 c sifted powdered sugar
1 tsp vanilla
about 2 TBSPs milk

Preheat oven to 350 degrees F. Spray either a 9 x 13 pan or (2) 8 or 9 inch cake pans with non stick cooking spray with flour.
Combine all dry ingredients in stand mixer and mix together on low speed.
Add eggs, buttermilk, coffee, oil & vanilla and beat on medium speed for 2 minutes.
Pour batter into greased pan or pans, and bake for 35-40 minutes in 9 x 13 or 30-35 minutes in round pans. Will be ready when a toothpick comes out clean.
Cool pan on a cooling rack for at least 30 minutes.

Make frosting by creaming butter & shortening together. Sift powdered sugar & add cocoa. Mix sugar & cocoa together in a medium bowl. Add sugar mixture in thirds to butter, mixing after each addition. Add a little bit of milk at a time between sugar additions. Add vanilla. Add a tiny bit of milk at a time to get it to a good spreading consistency.

Frost cake when it has cooled completely.
