"Be Kind To Each Other"

•Ingredients
12 Tbsp (Stick & a half) Salted Butter
2 Medium Yellow Onions
3 1/2Ibs Boneless Skinless Chicken Thighs
6 Garlic Cloves, Minced
1/2 Tbsp Fresh Ginger, Minced
1 Tbsp Paprika
3 Tsp Garam Marsala (Divided 4 Tsp & 1 Tsp)
2 Tsp Ground Cumin
1/2 Tsp Ground Turmeric
2 Tsp Seasoned Salt (Divided 1 1/2 Tsp & 1/2 Tsp)
1/2 Tsp Cayenne Pepper
14.5oz Diced Tomato
1 Cup Unsweetened Coconut Milk
6oz Plain Greek Yogurt
2 Tbsp Corn Starch
6oz Tomato Paste
1/2 Cup Heavy Cream
Fresh Cilantro
4 Tbsp Water

Add butter to instapot on high setting and once melted add onions, garlic and ginger and cook for 5 Minuets or until softened and beginning to brown. Add the chicken and cook 2-3 minuets (don’t cook fully, it will be slightly pink still), then add the your seasoning leaving the seasoning divided off to the side. Cook for 1 more minuet then stir in the coconut milk, diced tomatoes (juice and all) and once combined take the yogurt and place it in the center, Do Not Stir!
Secure the lid and set to high pressure for 8 Minuets. Add 2 Tbsp of corn starch to 4 Tbsp of warm water and combine into a slurry and set aside.
Quick release the instapot and stir in the heavy cream and the rest of the seasoning. Bring the instapot back to a simmer and add on the corn starch and turn off heat and rest for 5 minuets before serving!
Serve with white rice, garlic naan and top with fresh cilantro!
