INGREDIENTS :

4 salmon fillets
80 grams baby leaf spinach
80 grams chopped sun dried tomatoes
65 grams grated grana padano
150 ml double cream
8 ml olive oil
85 ml chicken broth
2 minced garlic cloves
1/8 teaspoon chili powder
sea salt
black peppercorn

INSTRUCTIONS :

.rub olive oil on skin side of salmon fillets
.sprinkle with sea salt & black peppercorn
.place on baking tray lined with parchment paper
.rub olive oil on skin side down
.sprinkle with sea salt & black peppercorn
.place in preheated oven 180 c / 356 f for 15 to 20 minutes
.in a frying pan on low to medium heat add 80 grams chopped sun dried tomatoes
.add 2 minced garlic cloves & cook for 1 to 2 minutes
.add 85 ml chicken broth, 150 ml double cream
.add 1/8 teaspoon chili powder, 65 grams grated grana padano
.mix well, cook until cheese is melted
.add 80 grams baby leaf spinach, mix well & cook for 3 to 5 minutes
.add cooked salmon, cover with sauce & cook for 2 to 3 minutes
