How to Make Focaccia with Leftover Mashed Potatoes
Learn how to make an easy focaccia with LEFTOVER mashed potatoes. These are perfect for the day after Thanksgiving or any time you have leftover mashed potatoes that you don't know what to do with. This ended up being the softest and fluffiest focaccia I've ever made. I hope you like it! #nowaste #thanksgivingleftovers #leftoverschallenge
✏️ Recipe:
Leftover Mashed Potatoes - 3/4 Cup
Water - 1 Cup
Olive Oil - 1 Tablespoon
Instant Yeast - 1/2 teaspoon
Salt - 1 teaspoon (or 6 grams)
Bread Flour - 2 to 2.5 Cups
Topping:
Olive Oil - 4 to 8 Tablespoons
Salt - A few sprinkles
Dried Rosemary - A few shakes
NOTE: No, I did not use a digital scale to weigh the ingredients in this recipe. Guess what, it still made great bread. (Gasp!) As long as you follow my measurements fairly closely and get a dough consistency that looks similar to what I have in this video, you can get a similar result. Scales are great once you have a tried-and-true recipe that you want to imitate with consistency. This, on the other hand, was a recipe idea I had when I just wanted to use up some leftover mashed potatoes. Sometimes it's fun to go scale-less and to realize that you can make great bread with just your baker's intuition!
