My Papa Mosley made the very best chili. Everyone always begged him for the recipe and my Granny finally convinced him to write it down not long before he passed. He would make a huge pot to last a while, so you may want to cut the recipe in half. I hope you go make some and let me know how you like it! Y'all go make you some!

Papa's Chili Seasoning

2 oz bottle Chili Powder
1 tsp Celery Seed
2 TBSP Onion Flakes
1/2 TBSP Black Pepper
1 tsp Garlic Powder
1 tsp Oregano
1 tsp Onion Powder
1 TBSP Cumin
1 1/2 tsp Salt
1 tsp Paprika

Mix all together and keep in a jar with a tight fitting lid.

Papa's Chili

5 lbs your choice of meat
Papa's Chili Seasoning above
2 TBSPs Bacon Grease
3 cloves Garlic, minced
1 sm can Tomato Paste
28 oz Diced Tomatoes & Green Chilies
15 ox Crushed Tomatoes
1 1/2 cup Ketchup
flour to thicken

Add bacon grease to a large stock pot and heat. Add garlic and stir for 30 seconds. Add meat and brown. You can drain if you wish. Add all other ingredients, mix, cover and simmer for at least one hour, stirring frequently. If it needs thickening, mix a little bit of flour in some water & add as needed.

You can freeze unused portions.
