Ingredients:

2 lbs beef cheeks
1/2 large onion, diced
4 garlic cloves, minced
2 tbsp dried oregano
2 tbsp dried thyme
4 dried ancho chilies, seeded and soaked in hot water for 15 minutes
4 dried guajillo chilies, seeded and soaked in hot water for 15 minutes
2 tsp cumin
1 tbsp salt
2 bay leaves
4 cups beef broth
2 tbsp apple cider vinegar
4 oz pineapple juce
Toppings of your choice (e.g., chopped cilantro, diced onion, lime wedges, grated cheese)
For the 50/50 tortilla mix:

1 cups corn flour
1 cups all-purpose flour
1 tsp salt
3/4 cup lard or vegetable shortening
2 cups warm water (mix as needed)

For the Consommé:

2 cups of the reserved cooking liquid from the Birria or
2 cups chicken broth
1/2 onion, diced
2 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp cumin
Salt, to taste
1/4 cup chopped cilantro (optional)
