Savory Smoked Squash Soup Recipe:

Ingredients:

4 lbs of Winter Squash (Butternut, Acorn, Pumpkin, etc.)
1 lb of new red potatoes
1 full head of garlic
4 cups of Chicken Broth
1 cup Heavy Cream
1 Onion, finely diced
2 Tbs Olive Oil – for the roasting pan

Spices
½ tsp Salt
¼ tsp pepper (white or black)
¼ tsp ground cumin (or substitute with ¼ tsp nutmeg for a more sweeter soup)
¼ tsp ground ginger
1 sprig rosemary

Garnish:
4 – 6 strips of bacon cooked fully and crumbled
½ cup parmesan cheese
¼ cup green onion chopped or chives.

Method:
Caramelize the onion, and roast the garlic heads until the cloves are soft, add to the squash and potatoes and roast in oven for 45 min to and hour, or until the squash can be easily mashed.

Place all of the items from the roasting pan into a soup pot (remove skins from the potatoes). Add 1 cup of heavy cream, 4 cups of broth, and all spices. Using an imersion blender, blend everything together until homogeneous and creamy. Allow soup to come to a low simmering boil – about 15 – 20 minutes. Soup is now ready to serve.

Add garnish as desired.
