1st Fish Dish (Sole)
7 Oz Baby Potatoes
1 Tsp Olive Oil
Salt & Black Pepper
1/2 Tbsp Lemon Zest
6 Oz Sole Fish
Drizzle of Olive OilSalt & Black Pepper
1/2 Tbsp Lemon ZestBake at 350 ºF (10 - 15 minutes)
Dressing
1 Tbsp Fresh Dill
1 Tsp Olive Oil
Salt & Pepper
1 Tbsp Lemon Juice
2nd Fish Dish (Salmon)
4 Oz Salmon Fillet
1 Tsp Olive Oil
Salt & Black Pepper
2 Slices of Lemon
Bake at 350 ºF (13 - 15 minutes)
(Hummus)
4 Oz Chickpeas (Boiled)
Salt & Pepper
7 Mint Leaves
1 Oz Greek Yoghurt
Garnish/Sides
1 Oz Spinach
2 Radishes
Salt & Black Pepper
Squeeze of Lemon
3rd Fish Dish (Cod)
4 Oz Cod Fillet
1 Tsp Olive Oil
Salt & Fresh Black Pepper
Dried Oregano
Bake at 350 ºF (15 - 20 minutes)
1 Tsp Olive Oil
1 Tsp Garlic
1 Medium Red Peppers
4 Oz Spinach
Salt & Black Pepper
1 Oz Low Fat Cream Cheese
1 Tbsp Parmesan Cheese
