INGREDIENTS :

250 grams self raising flour ( 8.81 oz )
75 grams butter ( 2.64 oz )
1 beaten large egg
60 ml milk ( 2.02 fl oz )
1 teaspoon baking powder ( 4.00 grams )
43 grams caster sugar ( 1.51 oz )
1 teaspoon vanilla extract ( 4.2 grams )
60 grams powdered sugar ( 2.11 oz )
200 grams strawberries ( sliced & halved ) ( 7.05 oz )
540 ml double cream ( 18.25 fl oz )

INSTRUCTIONS :

.in a large mixing bowl add 250 grams self raising flour, 1 teaspoon baking powder & mix well
.add 75 grams butter and rub together until crumb consistency
.add 43 grams caster sugar & mix well
.make a well in centre, add 1 beaten large egg
.add 60 ml milk, 1 teaspoon vanilla extract
.mix well & form into a ball ( if too sticky add some flour )
.sprinkle some flour on a flat surface, dough & rolling pin
.roll the dough evenly approximately 1/2 inch thick
.with medium circular cutter cut out circles ( 6 to 8 )
.place circles on baking tray lined with parchment paper
.place in preheated oven 180 c / 356 f for 10 to 15 minutes until risen & golden brown
.leave to cool
.in a mixing bowl add 540 ml double cream, 60 grams powdered sugar
.whisk with electric whisk until thick consistency
.once shortcake is cool slice in half
.layer with cream & spread evenly
.top with strawberry slices
.layer more cream & strawberry slices
.layer cream on top slice of shortcake & place on top
.sprinkle with powdered sugar
.top with half of a strawberry
