Salad Bowl:
Ingredients:
Grilled chicken or tofu
Mixed greens
Cherry tomatoes
Cucumbers
Avocado
Lemon vinaigrette dressing

Instructions:
Grill chicken or tofu and set aside.
Wash and chop mixed greens, cherry tomatoes, and cucumbers.
Cut avocado into small pieces.
In a large bowl, mix together the mixed greens, cherry tomatoes, cucumbers, and avocado.
Add the grilled chicken or tofu on top.
Drizzle with lemon vinaigrette dressing and mix everything together.

Whole grain wrap with roasted vegetables and a protein source such as shrimp, turkey, or black beans.

Ingredients:

Whole grain wrap
Roasted vegetables (e.g. bell peppers, zucchini, eggplant, etc.)
Shrimp, turkey, or black beans
Optional: hummus, cheese, salsa, etc.

Instructions:
Roast the vegetables in the oven or on a grill until tender.
Warm up the wrap in a pan or in the microwave.
Spread hummus or cheese (if desired) on the wrap.
Add the roasted vegetables and protein source (shrimp, turkey, or black beans).
Optional: add salsa or any other toppings.
Roll up the wrap and enjoy.

Ingredients:
Grilled fish (e.g. salmon, cod, tilapia)
Quinoa
Steamed or roasted vegetables (e.g. asparagus, broccoli, carrots, etc.)

Instructions:
Grill the fish and set aside.
Cook the quinoa according to package instructions.
Steam or roast the vegetables until tender.
Serve the grilled fish on a bed of quinoa.
Serve the steamed or roasted vegetables on the side.
