2 ea. 1 lb. 1-2 oz. whole fish, 1/3 c. shallots or onions, 1 pt. fish stock made from bronzoni bones and head, 1/3 c. scallions, buere manie for thickening, 1/4 c. dry white wine for the sauce none for fish, 1/4 tsp. saffron threads.;
