Soft Blue Berry Biscotti Style Pastry

Lightly sweet, soft blue berry pastry, great with coffee or tea.

Ingredients

2 cups of Flour
1 tablespoon of Quick Rise Yeast
1 & ½ cups Blue Berries (Dried or Fresh)
¼ cup of Sugar (or less)
1 teaspoon of Vanilla Essence
½ cup of Butter (Room temperature)
A pinch of Salt
1 cup of Hot water
½ teaspoon of Ground Cinnamon
1 teaspoon of dried grated peel mix (Orange, Tangerine, Lemon & Lime peel)

Dry Mix
The flour, salt, mix peel and two teaspoons of sugar is mixed together. Then you add the room temperature butter to the mix. Using you fingers, mix the dry ingredients and the buttery until it’s silky and smooth. Make sure all the butter is thoroughly melted and mixed with the flour. Create a hole in the middle to add the yeast mix later.

Rehydrate the Blue Berries
Rehydrate the dried blue berries with hot water for 15 -20 mins. Drain the water and keep that water for the yeast mix. The blue berries should be placed in a pot with a couple of teaspoons of sugar to cook on the stove top on medium heat. Cook this for 20 minutes, add 3 – 4 teaspoons of sugar and a table spoon of water and let it simmer.

Wet Mix
Take the water from the blue berry and add 1 teaspoon of sugar. Mix well until it’s dissolved fully. Add 1 table spoon of yeast and mix well. Cover the yeast mix and let it sit for 15 mins. When it’s start making bubbles at the top, add to the dry ingredients. Add to the whole in the dry mix.

Mixing the Dough
Using a fork, mix the ingredients until most of the liquid it fully gone. Then using your hand to knead the dough into a disc. Leave it to rise for 45 mins – 1 hour. After 45 mins -1 hour, cut into two pieces to roll out or roll out and cut into two later.
Dust the counter with flour and spread the dough on the counter with a Rolling Pin. Stretch out as to ¼ of an inch or thin enough that it’s not fragile like phyllo but not thick as pizza. Add the blue berry mix, spread evenly on the dough. Slowly roll up the dough, folding the edges as you roll.
Place on a baking pan and let it rise for another 45 mins to 1 hour, then bake.

OVEN INSTRUCTIONS
Preheat at 350 degrees
Bake 325 degrees for 1 hour
