Spicy Chipotle Chicken Burritos. Low calorie, high protein, PACKED with flavour, and great to meal prep.

Done in 20 minutes!

Chicken:

2-3 chicken breast (approx. 300g total)

1/2 tsp olive oil

⚫ season with salt, pepper, paprika, garlic powder, chili powder, oregano and cumin

Spicy Chipotle Sauce:

3 tbsp light mayo / miracle whip (or 1/4 cup greek yogurt and salt)

1-2 chipotle peppers, finely chopped (depending on your spice tolerance)

squeeze of lime (juice of half a lime)

1/2 tsp garlic powder

Burritos:

2 large tortillas (approx. 60g)

• 1/4 cup low fat cheese (I used mozzarella)

• 1/2 cup shredded lettuce

• 1 tomato, sliced

⚫ 1 small red onion, sliced

Notes:

The chipotle peppers come from a can with "adobo sauce". You can find it at any grocery store in the Mexican food aisles.

If you want to balance the spicy with sweet, add 1 tbsp of honey or maple syrup to your sauce.

• To ensure your chicken seasoning doesn't burn on the pan, make sure to cook on medium heat and optional: lightly grease the pan with oil beforehand.

• You can make these burritos in large batches and store them in the fridge for up to 5 days as a meal prep. Reheat them in the microwave and even toast on a pan.
