Spanish Style Chicken and Rice - Quick and Delicious and Less than 500 Calories

Quick and easy Spanish style chicken and rice. Takes less than 30 minutes to cook and is roughly 290 calories a person.

Serves 3-4 people

- 200g chicken
- 2 tablespoons of olive oil
- 1 cup uncooked rice
- 2 and 1/4 cups of chicken stock
- 2 teaspoons of smoked paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/4 teaspoon of Italian seasoning
- salt and pepper or season salt to taster

- Heat olive oil in pan and cook chicken 2/3 mins on each side and mix the seasoning together and add half to chicken
- Remove chicken from pan and set aside
- Add the rice and stock to the pan, then stir in the rest of the seasoning
- Then add the chicken on top of the rice, add lid to the pan and cook for 20 - 25 minutes
