Skirt steak is a great steak and cooks quickly and the price is typically cheaper than most cuts of steak. Marinate the skirt steak for a few hours before sear over hot coals or on a griddle. When the internal temp of the steak reaches 125 degrees F pull and rest for 10 minutes before slicing thin against the grain for an easier bite through.
