Say Goodbye to Store-Brought Sauerkraut...TRY THIS at Home!
In this video, we're going to learn how to make our own sauerkraut at home! Some trial and error going on here too as this is my first attempt. You'll see a bit of both tries. Go with the recipe below and the second try information. Enjoy and let me know how it goes?
Store-bought sauerkraut is expensive and often full of unhealthy additives. In this video, we're going to learn how to make our own sauerkraut, using only natural ingredients. After watching this video, you'll be able to make delicious, healthy sauerkraut at home!
When I was at the grocery store I had Sauerkraut on my list. I'm trying to get my gut healthier. Sauerkraut is a delicious, probiotic-rich dish that is perfect for any time of year. I saw the price. OMG! Such a small amount for $5.
I remember a friend who made Kraut and Kimchi, they told me it wasn't hard at all. Just lots of chopping. Of course I think I can do that!
So I did get a bit cocky, when I saw Sauerkraut has only 2 ingredients I thought it had to be super easy to make at home. Well I had to throw the first large batch away. It wasn't that it was hard. I just followed a recipe that wasn't quite right. They didn't tell me to brine the water if I needed to add extra. They also used the extra outer leaves to weigh the fermenting Kraut down.
Well those outer leaves started rotting in the salt water and they were not keeping all the cabbage under the brine. You MUST keep all the ingredients under that water.
The next batch you will see I used a baggy of water that would lay over the whole top of the kraut and brine. This batch is coming along nicely. I'm excited!
This is what I did for the good batch,
1 head of cabbage - take all the bruised leaves off. Cut the stalk out
Chop it thick or thin. You get to choose
1.5 -2 tsp of sea salt per pound of cabbage
Don't used iodized salt to ferment. It just does't work
So me I added aromatics to mine, 1 large clove of garlic 1 inch of ginger
Mince them. I also added a carrot. I love the color and just love carrots.
When all that is in the same bowl, sprinkle the top with the salt and massage it in to everything. This is that magic that will cause the fermentation.
You will see the waters coming out. The fresher your cabbage is, the more liquid will start forming in your bowl.
With the second batch. I also mashed it into the jar I was using to ferment in. This helped me work up enough liquid that I didn't have to add extra.
If you do have to add extra, make sure you add salt to it. 4 tsp per cup.
