Becker's Easy Eats Lunar New Year Specials: Easy Longlife Noodle

Lunar New Year falls on the 22 January this year and every New Year's Eve, families young and old gather together for a feast featuring traditional Chinese dishes that symbolize good omens and wishes to every one.

Noodles is always present on the New Year's Eve table as the long strands of noodles represents long life. There are many way to prepare this noodle dish. I am making one that is both delectable and colorful, plus there is a celebratory tossing and mixing of the noodles before everyone takes their share.

EASY LONGLIFE NOODLE

Ingredients:
300g noodles (any type, this recipe uses fresh noodles)
5-6 pcs dried shiitake mushrooms
80-90g each of carrot, red bell pepper and cabbage
100g chicken breast meat
1 egg
2 tbsp each of soy sauce, oyster sauce and sesame oil
½ tsp each of garlic powder, onion powder and ginger powder
1 tsp each of ground white pepper, cayenne pepper
½ tsp corn starch
Green onion
Salt to taste
Oil for cooking
