Mapping out Day and Night on the 15 long

Mapping out locations along the 15° latitude, i noticed that you can't see north or south of the 85° latitude...why?

How can this be a map if we don't show the entire surface. Why don't we fly across the arctic? It would save so much time and energy if we traversed it? Why arent the poles mapped out???
