This Poppyseed Chicken Casserole is a quick weeknight dinner or a perfect casserole to serve to guests.

Poppyseed Chicken Casserole
4 whole chicken breasts
4 oz can sliced mushrooms
1 cup cream of mushroom soup
1 can cream of chicken soup
8 oz sour cream
2 sleeves Ritz crackers, crushed
1/2 cup butter, melted
3 T poppyseeds

Cut chicken into small pieces. Cook through. Place into bottom of 9x13 pan.
Add drained mushrooms.
Mix soups with sour cream, spread over top of mushrooms.
Combine Ritz cracker crumbs, melted butter, and poppyseeds, spread on top of soup mixture.
Bake at 375 for 30 minutes or until bubbly.

For a double recipe:
8 whole chicken breasts

1 can cream of mushroom soup
1 can cream of chicken soup
16 oz sour cream
3 sleeves Ritz crackers, crushed
3/4 c butter
4 T poppyseeds

Cream of Chicken Soup Substitute
Equivalent to 10 3/4 oz can of Cream of Chicken Soup

2 cups instant dry milk powder
3/4 cup corn starch
1/4 cup low sodium chicken bouillon granules
1 tsp onion powder
1/2 tsp thyme
1/2 tsp basil
1/4 tsp pepper

To prepare:
Blend 1/3 cup mix
With 1 1/2 cup water
Cook until thick

If you add cheese, it will make a thicker soup.
