Cajun Creole Collard Greens

In this video, we are going to harvest some of our creole collard greens and make Cajun Creole-style collard greens. Soon we will be making this all from our garden. This is the recipe we want to make in bulk & pressure can now!

RUE
1 cup Extra Virgin Olive Oil
1 cup All Purpose Flour

MIREPOIX WITH GARLIC
1 large onion, diced
1 bell pepper, diced
5 celery stalks, diced
5-6 cloves of garlic

SEASONINGS
Creole seasoning
Dried oregano
Garlic powder
Onion powder
Smoked paprika
Cayenne pepper

CAJUN CROLE COLLARD GREENS
4-6 bunches of collards
1 Smoked turkey leg
2 - 4 Andouille sausages
2-4 quart bone broth/water
