INGREDIENTS :

400 grams chopped sausages ( 14.1 oz )
340 grams chopped potatoes ( 11.99 oz )
230 grams chopped sweet potatoes ( 8.11 oz )
160 grams chopped carrots ( 5.64 oz )
150 grams chopped parsnips ( 5.29 oz )
130 grams chopped onion ( 4.58 oz )
200 grams chopped button mushrooms ( 7.05 oz )
30 grams chopped parsley ( 1.05 oz )
3 tablespoons olive oil ( 39.9 grams )
1/2 teaspoon salt ( 1.15 grams )
1/4 teaspoon ground black pepper ( 0.57 grams )
1 teaspoon dried thyme ( 0.91 grams )
1 teaspoon dried rosemary ( 1.20 grams )
1 teaspoon dried sage ( 0.68 grams )

INSTRUCTIONS :

.in a large baking dish brush some olive oil
.in a large mixing bowl add 340 grams chopped potatoes, 160 grams chopped carrots
.add 150 grams chopped parsnips, 230 grams chopped sweet potatoes
.add 130 grams chopped onion, 200 grams chopped button mushrooms
.add remaining olive oil ( 2 1/2 tablespoons )
.add 1 teaspoon dried sage, 1 teaspoon dried thyme
.add 1 teaspoon dried rosemary, 1/2 teaspoon salt
.add 1/4 teaspoon ground black pepper & mix well
.add 400 grams chopped sausages & mix well
.transfer to the baking dish
.top with 30 grams chopped parsley
.cover with aluminium foil & place in a preheated oven 200 c / 392 f for 60 to 90 minutes ( until veg is soft )
