A risotto that looks very sophisticated but is actually very easy to make.

Ingredients:
• 500 g of soft meat (rump, topside, sirloin steak, filet mignon…) I used coxão mole
• 1 cup arborio rice
• 1 liter of beef broth
• 1 chopped onion
• 2 garlic cloves
• Leek (to taste) I used 2 small ones
• 1/2 cup dry white wine
• 2 tablespoons of butter
• dash of olive oil
• 1 tablespoons of cream cheese
• 50 g parmesan cheese
• 50 g of gorgonzola cheese
• Salt and black pepper to taste)
Method:
Cut the meat into cubes, chop the garlic, onion and leek.
In a pan, add a drizzle of olive oil, fry the meat until browned, season with salt and pepper. Remove from the pan and set aside.
In the same pan put a spoonful of butter, add the onion, garlic and leek, sauté a little, add the rice and stir for a few minutes, pour in the wine, keep stirring, gradually add the meat broth always stirring until the rice reaches the point (almost cooked).
Return the meat to the pan, add another spoonful of cold butter, add the Parmesan cheese, the gorgonzola, more meat broth if necessary, keep stirring quickly until the cheese melts completely, always adding meat broth to avoid burning.
To finish, add the curd and stir a little more, it's ready, serve warm.
