INGREDIENTS :

260 grams chopped carrots ( 9.17 oz )
110 grams chopped onion ( 3.88 oz )
850 ml vegetable stock ( 28.74 fl oz )
2 minced garlic cloves
3 grams sliced ginger ( 0.10 oz )
1 tablespoon Curry powder ( 6.3 grams )
1 tablespoon honey ( 21 grams )
1 teaspoon dark soy sauce ( 5.52 grams )
1 tablespoon olive oil ( 13.3 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )

INSTRUCTIONS :

.in a large pan / wok on medium heat add 1 tablespoon olive oil
.once heated add 260 grams chopped carrots, cook for 3 to 4 minutes
.add 110 grams chopped onion, 2 minced garlic cloves
.add 3 grams sliced ginger & cook for 3 to 4 minutes
.add 1 tablespoon Curry powder, 1/4 teaspoon ground black pepper, mix well
.add 850 ml vegetable stock & mix well
.add 1 teaspoon dark soy sauce, 1 tablespoon honey & mix well
.cook until carrots are soft ( approx 10 to 15 minutes )
.blitz with a hand blender until smooth consistency
