How To Organize Multiple Catering Events
Learn our main 2 basic techniques for managing, organizing and executing multiple banquet and catering events throughout the day or week. The two strategies outlined are:
1. The Catering Board: A dry erase white board organized as such..
Columns. 1. TIME 2. PLACE 3. GUEST COUNT 4. DESCRIPTION (Menu)
Rows: Each row is a catering event meal period. This may be for one whole day's worth or you can further break the rows down in to days and put a whole weeks worth of jobs on one board.
This format offers a quick, all in one visual representation of your daily or weekly catering. This makes organizing staff, prep lists, ordering easier to manage for you and the whole team.
2. Keep copies or small versions of the day/weeks beos on you at all times. As items arise, make notes on your personal copies. If your notes are important to the team, make copies of your BEOS with your raw notes on them and post them where your BEOs usually are.
