These Chocolaty Candy Cane Triangles from WW (formerly known as Weigh Watchers) are delicious. They have a great texture and a very fudgy taste. The surprise ingredient in these brownies is the black beans. I wasn't sure about black beans in brownies but they added volume and texture. I was pleasantly surprised how delicious these turned out! Chocolaty Candy Cane Triangles
Makes 32 Triangles

Cooking spray
15 oz canned black beans, rinsed and drained
1/2 c sugar
1/4 c unsweetened cocoa powder
1/4 c melted butter
3 large eggs
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp vanilla extract
1/4 tsp mint extract
2 T all-purpose flour
1/2 c semi-sweet chocolate chips
3 T white chocolate chips
1 tsp vegetable oil (I used coconut oil)
4 peppermint hard candies, crushed

Preheat the oven to 350*. Coat an 8x8 inch baking pan with cooking spray.

To a food processor, add the beans, sugar, cocoa powder, butter, eggs, salt, baking powder, and both extracts. Process until very smooth, scraping down the sides of the bowl. Add the flour and semi-sweet chocolate chips. Pulse to combine.

Spoon batter into the prepared pan, spreading into an even layer. Bake until a toothpick inserted in the center comes out clean, about 25 mins. Cool completely.

Meanwhile, combine the white chocolate chips and oil in a small bowl. Microwave 1 minute until the chips melt, stopping and stirring in 30-second intervals.

Drizzle melted chocolate over the brownie. Sprinkle with the mints. Let chocolate set before cutting into 32 triangles. Enjoy!
