Melt in your mouth lemon cookies 🍋

These lemon cookies melt in your mouth. Easy to make. Everyone will love them. Great Christmas cookies to give or to enjoy with a cup of tea.

In a bowl add 2 eggs, 125g sugar (½ cup), 125g oil (½ cup), 125g plain yogurt (½ cup), 15ml jam (1 tbsp), zest of a lemon, pinch of salt and 15 ml baking powder (1 tbsp). Stir until combined. Stir in 450g (450ml) semolina in small batches.
Form small balls, around 15ml (1 tbsp) and roll in powdered sugar. Place on cookie tray lined with parchment paper and bake for 10 minutes at 180C or (350 F)
