Spinach Brunch Omelette / Omelet - 9May2022

The family loves these Tasty Brunch Omelette / Omelet

Ingredients: Makes 2 large Omelets

4 large eggs
3 Mini Sweet Bellpeppers
2 cups Shredded Cheddar Cheese
2 cups Diced Fresh Spinach
1.5 cups Diced Potatoes
1 cup diced luncheon Ham or fried bacon or sausage

Directions:
Add 3 tablespoons of oil to skillet. Add Bellpeppers and potatoes. Bring to heat then reduce. add half cup water to steam and cover with lid. Once the potatoes are tender, add Ham and Spinach. Continue to cook for a few minuets then remove from heat. Prepare eggs, add salt and pepper to taste. Whisk and prepare another skillet with 2 tablespoons of oil. Pour half the mixture into the skillet. Rotate to cover the bottom of the pan. When the egg is turning white add half the precooked mixture and top with cheddar cheese. Use a spatula to roll over the omelet. Remove from heat when done and slide onto a plate.
