This is the most delicious sourdough roll recipe you've (maybe?) never heard of! Similar to bagels, but without the hole, sourdough bialys are my new go-to recipe. I hadn't heard of bialys (delicious sourdough onion rolls) until a couple years ago when I found a recipe on a baking blog. They looked so good that I decided to try them, and now I make them every couple months. The onion filling makes these rolls amazing. The chewy texture is similar to ciabatta rolls in my opinion, and makes them perfect for sandwiches, or for just toasting with butter or cream cheese.
