Becker's Easy Eats Holiday Specials: Easy Snowballs

These melt-in-your-mouth cookies are known by many names - Russian Tea Cakes (usually made with walnuts, almonds or hazelnuts), Mexican Wedding Cookies (traditionally using pecan) or Christmas Snowballs (American version using pecan). My recipe uses cashew nuts which turned out to taste great as well.

EASY SNOWBALLS

Ingredients:
125g all-purpose flour
100g butter (salted)
1 cup finely chopped cashew nuts
2 tbsp granulated sugar
1 tsp vanilla extract
1 cup powder (confectioner’s) sugar for dusting

*this recipe makes 18– 20 snowballs
