Hopefully I haven't provoked the ire of angry Italian nonnas with this video.

Traditional Carbonara Recipe:
125g Spaghetti
2 - 3 scoops of pasta water
2 eggs
150g Pecorino Romano
2 strips of Guanciale or Pancetta (I used Pancetta since I could not source Guanciale where I live.

Imitation Carbonara Recipe:

1/2 white onion
1 clove garlic
2 - 3 strips of bacon, chopped
100 - 150ml cream or more as preferred.
*optional* white wine can be added just before adding the cream.
handful of fresh parsley, chopped
handful of parmesan to serve
1 egg yolk
