Easy and Delicious MEDITERRANEAN SALAD

This salad right here is just about as bangin as it gets. These flavors did not disappoint!

I used Arugula for the base, Persian cucumbers, heirloom mini tomatoes, red onion, fresh herbs, and to take it to the top some black cured olives, freshly toasted walnuts, 2 blocks of feta, and a dressing so fragrant you’ll be making it on repeat!

As always, feel free to substitute any of the ingredients for what you like and prefer - your salad is your own canvas, use my recommendations as a starting point and go from there.

Here is how I made it:

1.For the base, I used a bag of peppery baby arugula. You can use whatever you like.
.
2.To the arugula, added 3 finely diced Persian cucumbers, 1 cup of baby heirloom tomatoes sliced in half, 1/3 of a red onion finely diced, two large handfuls flat leaf parsley finely chopped, & one handful fresh mint finely chopped.

3.Then to elevate these beauties, lets add three superstar ingredients. I diced up 1/3 cup black cured olives. These are my favorite olives for this recipe. 1/3 cup toasted walnuts (I just toast these in a pan on the stovetop, let them cool, then chop finely), and 2 big blocks of feta cheese.

4.For the dressing, in a small food processor or blender add 1/3 cup of a great olive oil, the juice of 1 large lemon, a small pinch sea salt (dont overdo it since the feta is salty), a generous amount of fresh ground pepper, 2 garlic cloves, 2-3 teaspoons Aleppo pepper, the zest of 1 large orange (this is where you will get a stunning aroma that will take this salad to the top).

5.Process the dressing well, taste it, then adjust to your preferences. I like mine lemony, so i almost always add a little more lemon. But you do you.

Toss the salad well and devour. You can enjoy as is, with a piece of fish, chicken, or your favorite protein.
