Where did Aglio e olio originate
Spaghetti Aglio e olio is a traditional Italian pasta dish from Naples. A typical dish of Neapolitan cuisine. The dish is made by lightly sautéing sliced, minced, or pressed garlic in olive oil, sometimes with the addition of dried red chili flakes, and tossing with spaghetti

There are many different additions and takes on spaghetti Aglio e olio but in its simplest form, it is just pasta, olive oil, and garlic seasoned well and served with delicious parmesan cheese. For me, I like the addition of some parsley at the end and some finely sliced chili.

Is Aglio e olio very oily?
all though Spaghetti Aglio e olio used olive oil as its sauce when done properly and if using good quality oil this dish is not oily to the palate. Once the hot pasta and pasta water hit the pan it releases starch, this starch emulsifies the oil and the result is a creamy and balanced pasta that’s not oily at all.
