Individual Salmon Wellington

I bet you have heard or even tried a beef wellington but have you come across a salmon wellington? It's a recipe based on the beef variation just with salmon fish! I came up with a recipe for individual salmon wellington. It's a quick version with store-bought puff pastry but you still have to sauté the mushroom parsley duxelles, which takes this dish to a whole new level of awesomeness. The salmon wellington makes for a perfect Christmas or new year's dinner main course dish. It cooks rather fast and it's almost fool-proof. I have put together a recipe with progress shots and a video to help you make this easier.

00:11 - Prepare Mushroom Duxelles
00:59 - Arrange Salmon, Duxelles and Mustard on Puff Pastry
01:16 - Wrap in
01:31 - Brush with Egg Yolk
01:39 - Bake and Serve Up

Ingredients

For the fish:
4 piece Salmon Fillet *See Notes
1½ Teaspoon Salt
½ Teaspoon Black Pepper

Mushroom duxelles:
1 piece Shallot
4 ounces Button Mushrooms *see Notes
3-4 Tablespoon Parsley chopped
2 Tablespoon Olive Oil extra virgin
pinch Salt
1 Teaspoon Thyme fresh or dried
¼ cup White Wine *See Notes

To assemble:
2 pieces Puff Pastry Sheets
4 Tasblepoon Dijon Mustard
1 Egg Yolk
