1. Easy Salmon Recipe Baked in the Oven

INGREDIENTS:

Half salmon sliced
1 garlic head
1 tablespoon capers
1 teaspoon chipotle seasoning
1 teaspoon onion powder
1 teaspoon all purpose seasoning
1 teaspoon ground pepper
1 sliced onion
salt
3 tins peeled potatoes in water

DIRECTIONS:

Add oil in a baking dish, then add the salmon slices in. Add salt, onion powder, ground pepper and chipotle seasoning. Rub all the ingredients on the salmon pieces, making sure to cover both sides. You can now add the sliced onion, the garlic, the capers and all purpose seasoning.
Bake in the oven at gas mark 7 for 1 hour, or until the salmon is cooked.
Remove the salmon, the onion and the garlic from the baking dish, but make sure you leave the rest in the baking dish. Add the potatoes in water, add salt and bake in the oven until crispy golden in colour - around 30 minutes.

Serve with salmon and a sprinkle of parsley.

2. Spicy Buffalo Pork Shoulder Steaks

Ingredients:

4 pork shoulder steaks
3 tsp bicarbonate of soda
Spicy buffalo seasoning
Cold water
Oil
Potatoes

Directions:

Add the bicarbonate of soda in cold water, add in the pork shoulder steaks.
This mix will help the meat remain soft and moist, even after baking. You
can add even more bicarbonate of soda in the water and leave the meat in
the water mix for at least 10 minutes. You can even leave it for longer, or
overnight in the fridge. Make sure you fill the water to cover the meat.
Mix well, so that the bicarbonate of soda will dissolve.

When the meat is ready, you can transfer it into an oiled baking dish. Add on top
the spicy buffalo seasoning, then rub the meat well on both sides. Cook in the oven for
1 hour, at gas mark 7. The meat is ready when is golden on each side. If you like
your meat well done or crispier, leave it in the oven until it turns brown, like mine.

Slice the potatoes for fries, then add the fries in hot oil and fry over medium heat, until
golden brown.

Serve the pork shoulder steaks with fries and a salad side!

3. Meatballs and Mashed Potatoes in Meatball Sauce

MEATBALLS INGREDIENTS:

750 grams beek&pork mince
1 egg
1 diced or minced onion
1 diced or minced garlic head
2 teaspoons vegetable seasoning ( Polish Kucharek )
1 teaspoon ground pepper
2 teaspoons salt
1 bunch of chopped parsley
1 slice of stale bread
1 teaspoon paprika
1 cup of oil + extra for frying

Directions:

In a bowl, add the minced meat, then all the rest of the ingredients apart from the slice of bread. Soak the bread in water and drain - you can squeeze the water out with your hands. Add the bread in the meat mix and mix everything well. You should taste if you dare :) to make sure the meatballs mix is well seasoned. With oiled hands, grab around 1 tablespoon of the meatballs mix and roll into round shape. Add oil in a frying pan and bring to heat. When the oil is hot, add the meatballs and fry on each side. The meatballs should be golden brown on each side when they are ready. Remove the meatballs from the frying pan, but keep the oil.

MEATBALL SAUCE INGREDIENTS:

1 jar of pasta sauce
1 green bell pepper or any bell pepper of choice
1 large onion
Salt
Pepper

Directions: On medium heat, in a pot, transfer oil from the frying pan to the pot. Allow the oil to heat, then add sliced onion and the sliced pepper and fry until the onion is golden in colour and the pepper is soft. Add in the pasta sauce, clean the jar of the remaining sauce with a quarter of water, mix and pour into the pot. Add salt and pepper to taste, into the sauce and allow to boil until it thickens. When it gets thicker, add in the meatballs and allow to cook for 5 more minutes.

MASHED POTATOES INGREDIENTS:

4 potatoes
1 cup of milk
1 tablespoon of butter
1 bunch of parsley
Salt
Pepper
Water

Directions: In a pot, bring water to boil. The quantity of water depends on how many potatoes you use. The water needs to cover the potatoes once in the pot. Peel and cube the potatoes and get them into the boiling water. Boil until the potatoes are soft, you can check with a fork or even taste. Once the potatoes are boiled, drain the water and place the boiled potatoes into another pot or a bowl. Add milk, butter, salt and pepper and mash the potatoes with a potato masher. If you don't have a masher, you could use a fork as well. Mix well and if the mash is too thick, you can add more milk and keep mashing and adding milk, until you get the consistency you want. Add the chopped parsley in and mix well.

Serve the meatballs in sauce with the mashed potatoes.
