Let's Make Cranberry Orange Cake! (Cranberry Orange Bread) Great Last Minute Idea for Thanksgiving!

In this video I will show you my cranberry orange bread (cranberry orange cake) recipe and how to make cranberry cake starting with frozen cranberries. Imagine it’s Thanksgiving day the table is set with all shades of brown and there is your cranberry cake (cranberry bread) with its bright cranberries peaking through an orange tinted crumbly cake (cranberry bread) like a bright beacon of flavor calling people to eat it! This cranberry cake (cranberry bread) recipe is simple to make and a pleasure to eat. Your Thanksgiving dinner (Thanksgiving 2022) or Christmas dinner will be elevated to the next level. People will also be impressed with your baking skills!!

This is the perfect last minute side dish to make. It is the perfect side dish to bring to a Thanksgiving dinner!

The best cranberry orange short bread!
Ingredients:
3/4 cup white sugar
1/3 cup of whole milk or half and half
2 tbsp orange juice
the zest of one large orange
1/2 cup of avocado oil
2 large eggs
t tsp of vanilla extract
2 cups of flour
2 tsp baking powder
1/4 tsp salt
2 heaping cups of frozen cranberries

Instructions:
Turn on the hot box to 350 °F (178 °C)

Using a microplane slowly and carefully remove the zest from the surface of the orange being very careful to not include any of the bitter white material located just under the zest. Set the zest aside for now.

In to a medium bowl add sugar, milk, orange juice, orange zest, avocado oil, eggs and vanilla extract.

In a separate mixing bowl add the dry ingredients (flour, salt and baking powder).

Add the dry ingredients in small portions to the wet ingredients, all the while mixing the flour with the wet ingredients. Do not over stir.

At this point add the cranberries and mix until just nicely combined. Turn this mixture into a greased 9 inch cake pan (or bread loaf). Bake at 350 °F (178 °C) for about 1 hour or until a knife inserted into the center comes back clean. Remove the cranberry cake (cranberry bread) from the oven and allow to cool for at least 30 minutes before turning the cake onto a cooling rack. Allow the cranberry cake (cranberry bread) to cool completely before enjoying!
