Italian Rainbow Cookies
4 large eggs
1 cup dry sweetener (I used a combination of half organic sugar and half stevia blend)
3-1/2 ounces almond paste, cut into small pieces (This is available in the baking aisle of most grocery stores. I make my own and will have a video on that in the future. Also, Almond Paste is not the same thing as Marzipan so be sure to buy Almond Paste.)
1 cup Whole Wheat Pastry flour
1 cup vegan butter, melted and cooled
1/2 teaspoon salt
1/2 teaspoon almond extract
6 to 8 drops red food coloring
6 to 8 drops green food coloring
1/4 cup seedless raspberry jam (I made mine using sugar free jam)
GLAZE:
1 cup (6 ounces) semisweet or bittersweet chocolate chips
1 teaspoon shortening (I used Spectrum brand found in health food stores)
