RECIPE
▼材料 Ingredients
Unsalted butter 無鹽牛油(奶油) 80g
Icing Sugar 糖粉 35g
Condensed milk 煉乳 5g
Egg 雞蛋 20g
Cake flour 低筋麵粉 170g
蛋漿 Egg mixture:
Whole egg 全蛋 20g
Egg yolk 蛋黃 2
Sugar 砂糖 50g
Milk 鮮奶 75ml
Whipping Cream 淡忌廉(淡奶油) 150ml
▼步驟 Instructions
1. 加入已軟化的室溫牛油、加入糖粉後,打發至至淡白色
2. 加入雞蛋、煉乳,加入過篩低筋麵粉,壓成麵團,冷藏1小時
3. 預備蛋漿,將所有材料加入後攪拌,保鮮紙貼面,冷藏約半小時至所有砂糖溶化。
4. 取出麵團,擀成約5mm厚,放上模具上,慢慢壓向下至完全貼合
5. 蛋漿過篩,倒入蛋漿至9成滿,中層烤200°C/ 392°F 25-27 mins
