RECIPE
▼材料 Ingredients
French flour 法國麵粉T55 200g
Instant Yeast 速發酵母 3g
Sugar 砂糖 13g
Water 清水 130g
Salt 鹽 3g
Egg 雞蛋 2
Egg yolk 蛋黃 1
Corn Starch 栗粉 /玉米澱粉 5g
Sugar 砂糖 35g
Milk 鮮奶 200g
Whipping Cream 淡忌廉/淡奶油 50g
▼步驟 Instructions
1. 法國麵粉、酵母、砂糖、清水,混合成團後加入鹽,打至半光滑狀態
2. 25°C發酵1小時,平均分割成4份,滾圓後,28°C發酵1小時
3. 烤焗 190°C/ 374°F 13 mins,放涼後切去麵包頂部
4. 加入雞蛋、蛋黃、栗粉、砂糖、鮮奶碗中,隔水加熱至約70°C
5. 最後加入淡奶油後過篩,倒入麵包,160°C/ 320°F 20-23 mins
