布朗尼蛋糕 鬆軟超濃巧克力 ┃Fluffy Brownie Cake

RECIPE

▼材料 Ingredients

黑巧克力70% Dark chocolate 70% 100g
無鹽牛油 Unsalted Butter 50g
砂糖 Sugar 50g
鮮奶 Milk 80ml
蛋黃 Egg Yolk 3 (~55g)
無糖可可粉 cocoa powder 25g
低筋麵粉 Cake Flour 30g

蛋白 Egg White 3 (~90g)
檸檬汁 Lemon Juice 1ml
砂糖 Sugar 50g
鹽 Salt little

▼步驟 Instructions

1. 巧克力、牛油、糖,隔水加熱溶化,加入鮮奶、蛋黃
2. 加入已過篩可可粉、麵粉,攪拌均勻
3. 蛋白中加入檸檬汁、鹽,分次加入砂糖,打至軟性發泡
4. 蛋白分次加入蛋黃糊拌勻,倒入模具
5. 180C / 356°F,25 - 30 mins,出爐後倒轉放涼
