This is my grandma's Romanian sweet cheese pies recipe. I love this sweet, delicious and easy to make recipe.

Granny's Romanian Sweet Cheese Pies Recipe:

INGREDIENTS:

Dough:

500g flour
300ml milk
10g dry yeast
1 egg
3 tbsp oil + extra for frying
Pinch of salt

Filling:

500g soft cheese
1tbsp semolina
65g dry mixed fruits
1 lemon zest
100g sugar
2tsp vanilla essence
1tsp rum essence

DIRECTIONS:

Prepare the dough. Add the flour in a deep and large bowl and make a hole in the middle.
Warm the milk, but make sure it's warm and not hot, otherwise it will kill the yeast and it won't rise. In the warm milk add the yeast and incorporate. Add the milk and yeast in the hole you made in the flour, then add the egg and mix well. Add the oil and salt and mix again. Make sure everything is incorporated. Dust a work surface with flour, take the dough out of the
bowl and start kneading on the work surface for around 10 minutes, until the dough is not sticky anymore. If needed, you can sprinkle flour on the dough as you go. The consistency when it's ready should be that of playdough.
Transfer the dough in a large and deep bowl which is oiled. Take a piece of Clingfilm, large enough to cover the bowl, oil it and turn it over, the oiled side needs to be on the inside of the bowl. This will prevent the dough from sticking to the Clingfilm once it's risen.
Leave the dough to rise for around 40 minutes, or until it's doubled in size. Make sure you keep it in a warm area, if needed, covered with a blanket or something warm. You can check when the dough is ready by poking your finger in it. If the dough deflates, it's ready, if it springs back, in needs more rising.
Once your dough is ready, prepare your filling. In a large bowl, add the soft cheese and sugar and mix well, then add the egg, mixed fruits, lemon zest, vanilla and rum essence. Incorporate all very well. Taste, and if it's not sweet enough, you can add more sugar.
Oil work surface and Take the dough out of the bowl, and for each pie, you should have a tennis ball sized dough portion. Take the dough portion and on a dusted work surface, roll the dough out in a round shape, around 2 cm thickness. Add approx. 1tbsp of cheese filling and spread over the surface.
Fold the filled dough as an envelope, to make sure the cheese is covered with the dough. Roll again to get the round shape. Repeat the same process with the rest of the dough.
Depending on the size of each of your individual pies, you will need either 1tbsp of filling or 2 tbsp.
In a frying pan, heat oil on medium heat. Add the pies one by one and fry on medium heat, on both sides. The pie needs to be golden brown on each side before it's ready.
Before serving, sprinkle vanilla sugar.
