Ingredients:

• 1 cup sweet grape tomatoes
• Olive oil
• 2 cups of rice for risotto
• 1 onion
• 1 carrot
• 1 small leek stalk
• ½ cup of orange juice
• 1 liter of water
• 1 bay leaf
• 2 cloves
• 1 tablespoon of oil
• ½ cup of grated Parmesan cheese
• 3 tablespoons of butter
• Salt and black pepper to taste

Method:

Wash and dry the tomatoes. Place the tomatoes in a pan greased with olive oil until they are evenly toasted. Transfer to a platter and set aside to serve with the risotto.

Cut the onion in half, in one of the halves, attach the bay leaf, skewering with the cloves. And chop the other half and set aside.

Grate the carrot, cut the leek in half, lengthwise and cut the pale part of the stalk into thin slices and reserve a few leaves.

In a pressure cooker without the lid, drizzle with olive oil and half a spoon of butter, add the chopped onion, the slices of the leek, the grated carrot, season with salt and pepper and sauté.

Add the rice and mix well to coat all the grains with the oil, drizzle with ½ cup of the orange juice. Stir until dry.

Add the water, onion with bay leaf and leek leaves. Cover the pan. As soon as steam starts to come out of the valve, count 3 minutes. Turn off the heat immediately and, with a fork, lift the valve to release the pressure.

With tongs, fish and discard the studded onion and leek leaves. Add the butter and grated Parmesan cheese. Mix well, taste and adjust salt.

Serve next with the grilled tomatoes.
