Pavlova, delicious pavlova created either in Australia or New Zealand (I'll those guys fight it out) in honour of Anna Pavlova the prima ballerina. See how I make slightly chewy but crisp exterior meringue is nothing to be afraid of. Pavlova consists of the best meringue topped with whipped cream and berries of your choice, I really want you to try my pavlova recipe and wow your friends or family with this supposedly difficult dessert.

Egg whites 4
Caster sugar 200g / 7oz
Cream of tartar 1 tsp
Cornflour 1 tsp
Vanilla extract 1 tsp
Double cream 300ml / 0.5pints
Mixed berries 450g / 1 lb
Apricot jam 1 tbsp
